Ayu cakes are famous cakes that are modeled and made in the shape of the ayu (sweetfish) caught during the cormorant fishing on the Nagara River which has a history spanning more than 1,300 years. The small and cute sweetfish-shaped cakes made in the image of the young sweetfish found in the clear Nagara River are generally known as "ayugashi." The cakes are well-known traditional Gifu Prefecture sweets of mochi rice cakes (gyuhi - a soft type mochi) wrapped in a soft castella sponge cake.

We use mochi rice cakes made with 100% Gifu-made Hatsushimo Rice Flour and a salty-sweet sauce that is made with tamari soy sauce prepared with underground water from the Nagara River.
Coffee, citron tea, ginger entrance tea, ginger enter tea and hot and ice drinks are prepared from green tea with gold dust, hosted by tea ceremony who loved hospitality after Nobunaga Nobunaga.
